The sensor updates every 10-15 seconds normally but home assistant only shows the updated when the value changes.
Mixed version systems can do odd things but ultimately, 300 watt hours is not enough to really worry about. Remember your existing stack might have wear so the total kWh will be less ...

make sure you put it into airplane mode, then only enable wifi. Phones are too clever nowadays and will try to bridge wifi with mobile networks when it can't access the internet causing the browser to stall. Airplane mode solves this.

It's very sensitive and unintruitive currently.

My advice would be to make sure with your installer that your firmware is up to date as there have been improvements since initial release.

Then you have to set it and not touch or make any changes or you maybe accidently disabling it.

If the battery is not force charged to full regually the bms can get out of calibration. When did you last do a from grid force charge to 100%?

The fact that there is 0 current and assuming it's daytime might be a issue with the pv wiring.
If that voltage and current is correct then I would first upgrade the firmware to latest and then make sure the pv wiring is correct as per the fox manual. You can't parallel panels. Fox only support ...

Those are push connectors on the new gen2 plug. You simply need to push the orange tab in, insert the wire and release and it should have a good strong connection. in the meantime while you're waiting for your mcb to be upgraded to a larger one you can set the inverter limit to 70% so it's stays within the 32amp limit.

Short answer, no. You should keep each string to a single loop for a string per mppt. Combining or using mixed panels is not supported and will cause issues,

Correct, discharge to 50%, isolate battery stack and inverter and turn it all off.
Remove data and earth from BMS. Unplug the HV leads from the first battery, lift off the bms and place to the side.

No, you have to have 4 of the same. So 4x EP5 (non-heated), or alternatively you could ebay the EP5 and then get up to 4x EP11-H or 4x EP5-H.

In addition to Dave's correct and accurate advice I wanted to give a fresh idea.

As you only have 2 x HV2600 and they're rare and easy to sell, why not sell them and install a brand new stack of ECS cubes? Keep the same inverter and all the wiring, just replace the batteries.
